Squash Souffle - cooking recipe
Ingredients

2 lb. yellow squash, sliced
1 medium onion, sliced
1 tsp. salt
1/2 tsp. sugar
3 Tbsp. margarine, melted
3 Tbsp. flour
2 eggs, slightly beaten
1 c. milk
1/2 lb. grated cheese
salt to season
Preparation

Combine squash, onion, sugar and salt.
Simmer with small amount of water for 30 minutes.
Drain well.
Mash with potato masher.
Add eggs, margarine, flour, milk and cheese.
Add seasoning salt to taste.
Bake in a greased 1 1/2-quart casserole dish for 30 minutes.
Top with buttered cracker crumbs.
Bake for 10 minutes or longer if necessary.
