1 cup butter (no substitutes), softened
1-1/2 cups confectioners sugar
2 egg whites
1 teaspoon vanilla
2-1/2 cups all-purpose
1/2 teaspoon baking powder
1/2 teaspoon baking soda

Preparation

In a mixing bowl, cream butter and confectioners sugar. Beat in egg whites and vanilla. Combine flour, baking powder and baking soda; gradually add to the creamed mixture. Roll into 1-1/2 inch balls, then roll in sugar. Place 2 inches apart on greased cookie sheets. Flatten with a fork. Bake at 350\u00b0 for 12-14 minutes or until edges are lightly browned. Remove to wire racks to cool. Yield: about 4 dozen.
