Spinach And Brown Rice Casserole - cooking recipe

Ingredients
    1 Tbsp. oil
    1 large onion
    2 c. mushrooms, sliced
    1 clove garlic
    1 egg or 2 egg whites
    1 Tbsp. whole wheat flour
    2 c. low-fat cottage cheese
    1 pkg. frozen spinach, thawed and drained
    3 c. cooked brown rice
    pepper to taste
    1/2 tsp. thyme
    2 Tbsp. grated Parmesan
    2 Tbsp. sunflower or sesame seeds
Preparation
    Heat oil in Dutch oven.
    Saute onion and mushrooms.
    Mix egg, flour and cottage cheese and add to sauce along with spinach. Stir in rice, pepper, thyme and 1 tablespoon Parmesan.
    Put in greased 12 x 8-inch pan and top with remaining cheese and sunflower seeds. Bake at 375\u00b0 for 30 minutes.
    Makes 8 servings, approximately 210 calories per serving.
