Fideos Con Chorizo - cooking recipe

Ingredients
    8 oz. chorizo
    3 (16 oz.) cans chicken broth
    2 large tomatoes
    1 clove garlic
    1/2 red onion
    1 avocado
    1/4 c. Parmesan cheese
    1 small pkg. vermicelli noodles
Preparation
    Brown chorizo in skillet on medium heat and drain.
    Puree in blender tomatoes, onions and garlic.
    Transfer to large deep skillet or saucepan.
    Bring to boil; stir consistently for 3 minutes.
    Add chicken broth and vermicelli noodles.
    Continue to boil and stir for 10 minutes.
    Add chorizo.
    Simmer until all liquids are absorbed.
    Slice avocado over noodles and top with Parmesan cheese.
