Pork Au Poivre - cooking recipe

Ingredients
    2 Tbsp. flour
    1 tsp. black pepper
    1 tsp. dry mustard
    1 lb. pork cutlets, pounded very thin
    2 Tbsp. oil
    1 clove garlic, sliced
    1/2 c. apple juice or white wine
    2 Tbsp. chopped fresh parsley
Preparation
    Stir together first 3 ingredients.
    Lightly coat cutlets.
    In large skillet, saute garlic in oil over medium-high heat for one minute.
    Discard garlic. Add cutlets and cook 2 to 3 minutes, turning once, until slightly brown.
    Remove and keep warm.
    Stir in juice or wine.
    Stir constantly for 2 to 3 minutes, until thickened and liquid reduces.
    Stir in parsley.
    Pour over cutlets.
    Serve on a platter.
