Ingredients

8 oz. chopped dates
1/2 c. light brown sugar
1/2 c. chopped pecans
2 eggs
1 tsp. vanilla
2 c. rice-crisped cereal
3/4 c. coconut
Preparation

Stir
together dates, sugar, pecans and eggs in medium-size saucepan. Cook over medium heat, stirring 6 to 8 minutes or
until thickened and beginning to simmer. Remove from heat. Stir
in vanilla
and cereal until combined.
Drop mixture by teaspoonfuls onto
waxed paper.\tPlace coconut in small bowl. Roll
cookies into balls.
Roll in coconut, pressing to stick, if necessary. Chill before serving.
