Pork Picante - cooking recipe

Ingredients
    1 lb. boneless pork, cut into 3/4-inch cubes
    1 Tbsp. hot sauce
    2 tsp. vegetable oil
    1 (8 oz.) jar chunky salsa
    1/3 c. apricot preserves
Preparation
    Coat pork with hot sauce.
    Heat oil in nonstick skillet over medium heat.
    Add pork and brown.
    Add salsa and preserves to pan; lower heat, cover and simmer for 15 to 20 minutes.
    Serve over rice.
    Serves 4.
