Ingredients

6 hens
2 tsp. salt
2 tsp. crumbled rosemary, Bells seasoning or both
1/4 tsp. ground cloves
1 tsp. grated orange rind
1 c. dried apricot halves
1 c. applesauce or apricot preserves
1 c. white wine
1/4 c. brown sugar, firmly packed
Preparation

Sprinkle hens inside and out with salt and rosemary.
Roast in a 350\u00b0 oven for 1 hour.
While hens are roasting, chop apricots; add to applesauce and wine in medium saucepan.
Stir in orange rind, brown sugar and ground cloves.
Simmer for about 30 minutes, until apricots are tender.
Spoon glaze over hens; roast 30 minutes longer.
