Homemade Potato Soup - cooking recipe
Ingredients

8 to 10 medium potatoes
1 stick butter
5 to 6 slices bacon
1/4 c. chopped celery
salt and pepper to taste
1/4 c. chopped scallions (onion)
Preparation

Pare and dice potatoes and put in large saucepan.
Add celery. Cut bacon into small pieces and add to potatoes.
Cover with cold water and boil until potatoes are tender.
Turn heat to medium-low and stir in butter.
Add salt and pepper.
Simmer until soup thickens slightly.
For a richer soup, 1 cup of cream may be added, if desired.
Stir cream during the last 15 to 20 minutes of simmering.
