Hot Borscht - cooking recipe
Ingredients

3 c. water
1 c. tomato juice (no salt if available)
3/4 c. chopped onion
1 c. shredded carrots
1 c. shredded potatoes
2 c. shredded cabbage
1 1/2 Tbsp. honey
1 1/2 Tbsp. lemon juice
plain nonfat yogurt (for garnish)
Preparation

In soup pot, combine water and tomato juice and bring to boil. Add vegetables; cover and simmer 30 minutes until tender.
Remove 2 cups soup from pot and puree in blender of food processor. Return pureed soup to pot and stir in honey and lemon juice. Cover and simmer 5 minutes.
Serve with yogurt for garnish.
