Watermelon Rind Preserves - cooking recipe

Ingredients
    1/2 c. salt
    2 c. vinegar
    4 c. sugar
    2 1/2 qt. water
    2 lb. rind
    1 lemon, sliced thin
    1 tsp. whole allspice
    1 stick cinnamon
    1 tsp. whole cloves
Preparation
    Remove\tthe
    green and pink from rind.\tCut into 1/2 to 1-inch strips.
    Soak overnight in salt and 2 quarts of water. Boil rind in fresh water until tender.
