Black Beans And Sofrito - cooking recipe

Ingredients
    2 cans black beans, rinsed
    1/3 c. oil
    1 large onion, chopped
    1 chopped bell pepper
    1 can drained tomatoes, chopped
    1 Tbsp. cumin
    1 tsp. minced jalapeno
    2 Tbsp. vinegar
    1 tsp. salt
    1/2 tsp. pepper
    1 Tbsp. garlic, minced
Preparation
    Heat oil in a large skillet.
    Add onion, bell pepper and garlic and cook until clear.
    Add rest of ingredients (except beans) and cook about 5 minutes.
    Mix the beans with vegetable mixture.
    Spoon over hot, cooked rice.
