P.E.O. Bean Soup - cooking recipe

Ingredients
    1 3/4 c. mixed dried beans
    ham or hamhocks
    2 qt. water
    1 large onion, chopped
    1 large can tomatoes
    1/2 to 1 tsp. chili powder
    1 clove garlic (optional)
    juice of 1 lemon
    salt and pepper to taste
Preparation
    Night before, wash beans thoroughly.
    Place in large kettle and cover with water.
    Add 1 to 2 tablespoons salt.
    In the morning, drain and add 2-quarts water and ham or hamhocks; simmer slowly 2 1/2 to 3 hours.
    Add remaining ingredients.
    Simmer another 30 minutes.
