Ingredients

2 c. persimmons
2 c. sugar
2 c. grated sweet potatoes
2 c. self-rising flour
2 eggs
1 c. milk
1 stick margarine or butter
1 c. coconut (optional)
1 tsp. vanilla
a little cinnamon
Preparation

Clean and cap persimmons (must be ripe and soft).
Run through a sieve.
Add the rest of ingredients.
Bake in sheet pan or in layers at 350\u00b0 for 45 to 50 minutes.
Good with ice cream or Cool Whip while warm.
