Ingredients

2 c. sugar
3 c. sifted all-purpose flour
1 fresh, grated coconut
1 lightly beaten egg
1/2 c. coconut juice
1 fresh, grated coconut
1 tsp. vanilla
2 egg whites
1 c. butter
4 tsp. baking powder
1 tsp. salt
1 tsp. vanilla
1/2 c. milk
2 c. sugar
1 c. water
pinch of salt
Preparation

Beat 1 cup of butter until creamy.
Add 2 cups of sugar, 1/2 cup at a time, and beat until creamy.
Beat in egg, flour, baking powder and 1 teaspoon of salt.
Add alternately with milk and coconut juice.
Beat until smooth.
Add 1 teaspoon of vanilla. Bake in layers at 350\u00b0 until cake tests done.
