Apple Butter - cooking recipe
Ingredients

4 lb. tart apples
2 c. mild cider vinegar
5 c. sugar
a few grains of salt
2 tsp. cinnamon
1 tsp. cloves
1/2 tsp. allspice
1 grated lemon rind
juice of 1 lemon
Preparation

In a large, heavy pot, place apples.
Cover with cider vinegar and cook until soft.
Add sugar, salt, cinnamon, cloves, allspice, lemon rind and lemon juice.
Cover tightly.
Cook over low heat until sugar dissolves.
Uncover and cook quickly, until thick and smooth.
Stir with wooden spoon so mixture won't stick and burn.
