Zucchini Relish - cooking recipe

Ingredients
    10 c. ground zucchini squash
    4 c. diced onions
    2 green peppers
    2 red peppers
    1/2 c. salt
    2 1/2 c. vinegar
    4 1/2 c. sugar
    1/2 tsp. red pepper
    1/2 tsp. black pepper
    1 tsp. celery seed
    1 tsp. nutmeg
    1 tsp. turmeric
    1 Tbsp. cornstarch
Preparation
    Put vegetables through a food chopper and sprinkle with salt. Marinate
    overnight
    in
    covered
    bowl in refrigerator, then drain and
    rinse with cold water.
    Mix and heat together remaining ingredients.
    Mix
    with
    squash
    and
    boil\t20 to 30 minutes. Pack in hot jars.
    Makes 7 pints.
