Italian Vegetable Dish - cooking recipe

Ingredients
    1 medium eggplant, peeled and diced
    1 large tomato, chopped
    1 large zucchini, sliced
    1 small onion, finely minced
    clove garlic, finely minced
    dash of each: basil, oregano, parsley, black pepper and rosemary
    4 Tbsp. Parmesan cheese
Preparation
    Place eggplant, tomato, zucchini, onion and garlic in microwave-safe dish.
    Sprinkle with herbs.
    Cover and cook on High for 5 minutes.
    Sprinkle with grated Parmesan cheese before serving.
