Molded Shrimp Salad - cooking recipe

Ingredients
    16 steamed shrimp
    2 avocados, chopped
    1 lime
    fresh cilantro
    16 cherry tomatoes (red or yellow, preferred)
    balsamic vinegar to taste
    olive oil to taste
    salt and pepper to taste
    chives, chopped (for garnish)
    1 large tomato
Preparation
    Make a ring mold by cutting off top and bottom of tuna can. Place mold on plate.
    Put 4 shrimp on bottom.
    Toss avocado with lime juice and cilantro.
    Put 1/4 of avocado on top of shrimp and press down.
    Add layer of halved cherry tomatoes.
    Make tomato vinaigrette by combining chopped tomato, vinegar, oil, salt and pepper.
    Spoon 1/4 vinaigrette around outside of ring.
    Remove ring.
    Top with chives.
    Repeat on 3 other plates.
    Serves 4 as appetizer or first course salad.
