Riviera Rice Pudding - cooking recipe

Ingredients
    1/2 c. regular rice
    1/8 tsp. salt
    1 c. water
    1 qt. milk
    1/4 c. butter
    3 eggs
    1/2 c. sugar
    1 tsp. vanilla
    1/4 c. raisins
    3 Tbsp. sugar
    1 Tbsp. cinnamon
Preparation
    Pour rice into large pot of boiling salted water.
    Do not stir.
    Cover and cook exactly 7 minutes.
    Add milk and butter. Stir a little.
    Bring just to boil, lower heat, cover and cook slowly for 1 hour on low heat.
    Beat together eggs, sugar, vanilla and raisins.
    Pour into rice mixture, stirring slowly, until rice starts to thicken.
    Serve hot or cold with a mixture of sugar and cinnamon sprinkled on top.
    Topping gives it a browned look.
