Picante Chicken Casserole - cooking recipe

Ingredients
    1 Tbsp. olive oil
    1/2 c. sliced green onion
    2 c. sliced, fresh mushrooms
    1 (4 oz.) can diced green chiles (Ortega)
    1 1/2 c. mild picante sauce
    12 oz. cooked chicken, shredded
    2 c. cooked rice
    6 Tbsp. lite sour cream
    4 oz. grated Cheddar cheese
    paprika
Preparation
    Heat oil and saute mushrooms and onion.
    Stir in chiles and picante
    sauce.
    Cook
    and\tstir
    over
    medium
    heat for 5 minutes.
    In
    a casserole, place chicken in the bottom.
    Cover with all but
    1/2 cup of the sauce.
    Bake at 350\u00b0 for 20 to 30 minutes. Combine rice, sour cream and 1/2 cup of the sauce and spread
    over
    chicken.
    Sprinkle
    on cheese and paprika.
    Heat for 15\tminutes more or until cheese melts.
    Healthy.
    Makes 4 servings.
