Spanish American Rice - cooking recipe

Ingredients
    2 Tbsp. vegetable oil
    1 large chopped onion
    1 green pepper
    1 stalk celery, chopped
    2 garlic cloves, minced
    1 lb. sausage (kielbasa)
    2 c. tomato sauce
    salt and pepper
    3 c. cooked rice
    2 to 3 Tbsp. grated cheese
Preparation
    Heat
    oil in skillet; cook onions slowly for 5 minutes. Add pepper,
    celery and garlic; cook another minute.
    Stir in sausage chunks
    and saute, stirring now and then for another 5 minutes. Stir
    in tomato sauce; add salt and pepper to taste. Simmer sauce while
    you spread half the rice in the bottom of greased casserole;\tcover with sausage mixture, then top with the final layer
    of
    rice.
    Sprinkle grated cheese on top, if you wish. Bake in a preheated 350\u00b0 oven for 20 to 25 minutes. Serve bubbling hot.
