Carrot Cake - cooking recipe

Ingredients
    2 c. sugar
    2 c. all-purpose flour
    1 tsp. baking powder
    1/2 tsp. salt
    2 tsp. cinnamon
    3 eggs
    1 1/2 c. vegetable oil
    2 c. fine grated carrots
    1 pkg. vanilla pudding mix
    1 tsp. vanilla extract
    1 c. drained, crushed pineapple
    1 c. shredded coconut
    1 c. chopped nuts
Preparation
    In mixing bowl, combine dry ingredients.
    Add oil, eggs, carrots and vanilla; beat until blended.
    Stir in coconut, 1/2 cup nuts and pineapple.
    Pour into a greased 13 x 9 x 2-inch baking pan.
    Bake at 350\u00b0 for 1 hour.
    While cake is baking, prepare icing.
