Stuffed Chicken Casserole - cooking recipe

1 chicken (about 3 lb.)
1 can cream of mushroom soup
2 Tbsp. chopped pimentos
1 (13 oz.) can evaporated milk
1 box (7 oz.) seasoned stuffing mix
1/2 c. shredded Swiss cheese
1/4 c. chopped parsley
Preparation

Cook chicken until tender.
Cool and remove meat from bones. Arrange chicken meat in a shallow 2-quart casserole.
In large bowl, combine soup, pimento, 2/3 cup evaporated milk, spread mixture over chicken.
Toss together stuffing mix and remaining milk until all milk is absorbed.
Spread over mixture in casserole then sprinkle cheese and parsley on top.
Bake at 350\u00b0 for about 30 minutes or until bubbly.
Serve hot.
