German Potato Salad - cooking recipe
Ingredients

1 Tbsp. flour
1/4 c. cider vinegar
1/3 tsp. white pepper
6 medium warm boiled potatoes, peeled and cubed
1/2 minced yellow onion
1/2 c. sweet green bell pepper
1 c. coarsely chopped celery
3 to 4 slices crisp cooked bacon
4 hard-cooked eggs, peeled and diced
3/4 c. cold water
2 Tbsp. sugar
2/3 Tbsp. salt
Preparation

Blend flour and 2 tablespoons water in a small saucepan; add remaining water, vinegar, sugar, pepper and 2 teaspoons salt.
Stir until mixture boils.
Place potatoes, onion, green pepper and celery in a large bowl and toss lightly.
Pour in hot dressing and mix well.
Cool to room temperature; add crumbled bacon and eggs. Toss again.
Taste for salt; add more if needed.
Serve at room temperature.
Serves 6, about 250 calories per serving.
