Balsamic Chicken And Peppers - cooking recipe

Ingredients
    2 small whole chicken breasts, split, boned and skinned
    1 Tbsp. flour
    1 tsp. ground coriander
    1/2 tsp. salt (optional)
    1 Tbsp. olive oil
    1 small onion, cut in thin wedges
    2 cloves garlic, minced
    1 small red bell pepper, cut into short thin strips
    1/2 c. reduced sodium chicken broth
    1/2 c. no salt added tomato sauce
    2 Tbsp. balsamic vinegar
    1 1/2 tsp. dried basil, crushed
    1 1/2 c. rice
    1/4 c. thinly sliced green onion with tops
    freshly ground pepper
Preparation
    Pound chicken to 1/2-inch thick.
    Rub with combined flour, coriander and salt.
    Brown chicken in oil in 10-inch skillet over medium heat on each side.
    Remove and reserve.
    Add onion, garlic and red pepper to skillet.
    Cook and stir 2 minutes; garnish with green onions.
    Serve over rice.
