Celery Au Gratin For 2 - cooking recipe

Ingredients
    1 c. celery, cut into 1/2-inch slices
    chicken broth (to cover)
    1 egg
    1/4 c. Parmesan cheese
    chopped spring onion (optional)
    chopped mushrooms (optional)
Preparation
    Boil celery and optional ingredients if desired in chicken broth in small saucepan until tender.
    Beat egg well.
    Pour small amount of hot broth into egg, stirring constantly.
    Stir egg into celery quickly.
    Pour into microwavable bowl.
    Sprinkle Parmesan cheese on top.
    Microwave on High until thickens almost to center. Place under broiler to nicely brown.
