Sweet Potato Salad - cooking recipe

Ingredients
    5 c. water
    1 1/2 lb. sweet potatoes
    2 medium stalks celery, thinly sliced (about 1 c.)
    1 small onion, thinly sliced
    1 medium orange, peeled and sectioned
    1/2 c. mayonnaise/salad dressing
    1 to 2 Tbsp. orange/pineapple juice
    1/2 tsp. dry mustard
    1/2 tsp. grated orange peel
    1/4 tsp. salt
    1/4 tsp. ground ginger
    1/8 tsp. pepper
    lettuce leaves
Preparation
    Heat water to boiling; add potatoes.
    Heat to boiling, then reduce heat.
    Cover and simmer until tender, 30 to 35 minutes. Drain potatoes; slip off skins.
    Cut potatoes into 1/2-inch cubes. Add celery, onion and orange.
    Mix remaining ingredients, except lettuce leaves; pour on vegetables and orange.
    Stir to blend. Refrigerate at least 2 hours.
    Serve in lettuce-lined bowls. Makes 4 to 6 servings.
