Crawfish Eggplant Casserole - cooking recipe

Ingredients
    1 lb. boiled crawfish
    1 large eggplant
    1 large onion slice
    2 slices stale bread
    salt and pepper to taste
    1 large spoonful fat
    1 large bell pepper
    1 stalk celery
Preparation
    Fry onion in hot fat.
    Add sliced eggplant, chopped bell pepper and celery.
    Let simmer, stirring frequently.
    Add chopped tails and let cook about 10 minutes.
    Mix thoroughly with bread, which has been moistened.
    Season to taste.
    Place in casserole. Cover with bread crumbs and keep hot in oven until ready to serve.
