Fried Eggplant - cooking recipe

Ingredients
    eggplant
    salt
    beaten egg
    fine bread or cracker crumbs
Preparation
    Peel eggplant and cut into 1/2-inch thick slices.
    Soak slices in salt water for about one hour.
    Drain slices and pat dry.
    Dip slices in beaten egg and roll in crumbs until well coated.
    Fry in hot fat (or deep-fry) until well browned on both sides.
    Serve with catsup and tomato sauce.
