Autumn Bisque - cooking recipe

Ingredients
    1/2 c. chopped leek
    1/2 c. chopped onion
    1/2 c. finely chopped celery
    2 large apples, chopped
    1/4 c. butter
    2 Tbsp. flour
    1 c. grated Cheddar cheese
    1/2 c. light cream
    7 c. chicken or turkey stock
    4 c. peeled, diced butternut squash
    1 tsp. thyme
    1 tsp. salt
    1/2 tsp. sage
    1/4 tsp. turmeric
    1/4 tsp. rosemary
    pinch of nutmeg
    pepper to taste
Preparation
    Saute vegetables and apples in butter.
    Stir in flour and cook.
    Add stock and simmer 10 minutes.
    Add squash and cook.
    Add seasonings.
    Add cider and cream; heat through.
    Remove from heat. Stir in cheeses.
    Garnish with croutons.
