Sweet Potato Biscuits(From Blue Pete'S Restaurant In Virginia Beach) - cooking recipe

2 to 3 medium sweet potatoes, peeled
1/2 c. butter or margarine
1/2 c. sugar
2 Tbsp. milk
1 tsp. salt
3 1/2 to 4 c. flour
4 1/2 tsp. fresh baking powder
Preparation

Heat oven to 400\u00b0.
Boil, steam or microwave sweet potatoes, then mash or process in the food processor.
While still hot, measure 1 1/2 cups into a bowl with butter, sugar, salt and milk and mix well.
Sift together the flour and baking powder at least twice to thoroughly combine.
Add flour to the mixture using your hands to made soft dough.
Roll out and cut square biscuits.
Bake on top shelf in a 400\u00b0 oven for 15 to 20 minutes until light golden brown.
