2 large onions, sliced thin
3 c. thinly sliced potatoes
3 c. boiling water
2 lb. cod, pollock or haddock fillets, cut into 2 inch pieces
2 c. milk

Fry pork until golden brown. Remove and set aside. Discard all but 2 tablespoons fat. Add onions to fat and saute until soft. Add potatoes and boiling water. Bring to boil and cook over medium heat until potatoes are tender, 12 to 15 minutes. Add fish and continue cooking for 10 to 12 minutes or until fish flakes easily with fork. Add the milk and half and half; season with salt and pepper. Heat (do not boil). Garnish each serving with some of reserved pork and crumbled crackers.
