Pumpkin Fritters - cooking recipe

Ingredients
    1 c. grated raw pumpkin (see Note)
    1 large egg
    1 c. flour
    1/2 c. sugar
    1 tsp. vanilla
    dash of salt
    1/4 c. raisins (optional)
    vegetable oil (for deep frying)
    brown sugar (optional)
Preparation
    In a large bowl, combine pumpkin, egg, flour, sugar, vanilla and salt.
    Blend in the raisins.
    Form batter into 20 loosely packed 1-inch balls.
    In a large skillet, heat 1-inch of oil to 375\u00b0.
    Drop fritters into the oil, being careful not to crowd and brown well on all sides.
    Drain fritters on paper towels and sprinkle with brown sugar.
