Creole Chicken And Rice - cooking recipe
Ingredients

5 lb. cut up chicken
3 tsp. seasoned flour
4 Tbsp. butter or oil
2 tsp. salt
dash of pepper
2 c. water
1 bay leaf
1/2 c. chopped onion
1 Tbsp. green pepper
1/2 garlic bulb
3 1/4 c. tomatoes
3/4 c. celery
2 c. precooked rice
Preparation

Roll chicken in flour.
Saute in 3 tablespoons fat until brown.
Add water, salt and pepper.
Cover and simmer for 1 1/2 hours or until tender. Saute onion, pepper and garlic in remaining tablespoon of fat.
Add to chicken. Add tomatoes, celery and bay leaf to chicken mixture. Cover and simmer for 15 minutes. Remove bay leaf.
Add rice and mix well. Cover and simmer 5 more minutes. Makes 6 servings.
