Shrimp Scampi - cooking recipe

Ingredients
    40 shrimp, peeled and deveined (16 to 20 size)
    2 Tbsp. garlic
    1 oz. basil
    1 Tbsp. shallots
    1 oz. parsley
    2 tomatoes, skinned and diced
    1 c. white wine
    1 c. butter
    2 oz. olive oil
Preparation
    Heat oil in large skillet.
    When it starts to smoke, add dry shrimp and cook 2 minutes, stirring occasionally.
    Add garlic and shallots and cook 1 minute.
    Deglace with white wine; add basil and tomatoes.
    Cook two more minutes.
    Remove from heat; stir in cubes of butter until melted.
    Season with salt and pepper.
    Serve over linguini.
    Serves 8 people.
