Zucchini Casserole - cooking recipe

Ingredients
    8 zucchini (unpeeled), sliced 1/4-inch
    4 medium onions, sliced thin
    1 clove garlic, minced
    1 green pepper, minced
    1/4 tsp. thyme
    1/4 tsp. basil
    1/4 c. olive oil
    1/4 tsp. soy sauce
    1 tsp. Worcestershire sauce
    1 tsp. sugar
    4 tomatoes, peeled and sliced (canned crushed can be used)
    1 c. grated cheese (Cheddar, Swiss or Parmesan)
    1/2 c. cracker or bread crumbs
    salt and pepper
Preparation
    Simmer all vegetables together in olive oil for about 20 minutes.
    Add seasonings.
    Layer vegetables, then tomatoes alternating.
    Sprinkle cheese, then crumbs.
    Bake at 350\u00b0 for 40 to 45 minutes.
