Lemon Curd(Served As A Spread Or Tarts.) - cooking recipe

Ingredients
    1 egg, well beaten
    juice of 4 or 5 lemons
    4 oz. margarine (use 1/2 butter)
    2 c. sugar
    1 Tbsp. grated lemon rind
Preparation
    Mix all ingredients.
    Heat slowly, stirring constantly until somewhat thickened.
    Do not let it boil.
    It thickens as it cools. Pour into glass jars once it is cooled.
