Lemon-Go-Lightly Cookies - cooking recipe

Ingredients
    2 c. all-purpose flour
    2 c. mashed potato flakes
    1 c. sugar
    1 c. firmly packed brown sugar
    1/2 to 3/4 c. finely chopped nuts
    1 tsp. baking soda
    3/4 c. margarine or butter, melted
    1 tsp. grated lemon peel
    2 eggs
    1/4 c. sugar
Preparation
    Heat oven to 350\u00b0.
    Lightly spoon flour into measuring cup; level off.
    In a large bowl, blend flour and remaining ingredients except 1/4 cup of sugar until well mixed.
    (Mixture will be crumbly.)
    Firmly press mixture into 1-inch balls.
    Roll in 1/4 cup of sugar.
    Place 2 inches apart on ungreased cookie sheets. Bake at 350\u00b0 for 9 to 12 minutes or until golden brown.
    Cool 1 minute.
    Remove from cookie sheets.
    Makes 6 dozen cookies.
