Baked Fish Fillets With Vegetables - cooking recipe

Ingredients
    1 large or 2 small carrots, sliced on an angle
    1 onion, diced
    1/2 green or red pepper, thinly sliced
    1 zucchini, julienned
    14 oz. can tomatoes or fresh tomatoes, seeded and skinned
    4 fish fillets (flounder, haddock, etc.)
    pinch of salt
    pinch of basil
    dash of black pepper
Preparation
    With the exception of tomatoes, place vegetables in saucepan, barely covered with water.
    Bring to a boil.
    Simmer for 10 minutes.
    Place fillets in shallow pan.
    Drain parboiled vegetables.
    Place vegetables and tomatoes over and around fillets.
    Bake in a 375\u00b0 oven for 20 minutes or until fish flakes easily.
