Waldorf Pasta Salad - cooking recipe

Ingredients
    3/4 c. rotini or corkscrew macaroni, uncooked
    1-1/4 tsp. salt, divided
    2 Tbsp. oil
    2 Tbsp. lemon juice
    1 tsp. sugar
    3/4 tsp. poppy seeds
    1/4 tsp. dry mustard
    1/4 c. chopped black walnuts
    1 large red delicious apple, peeled or unpeeled and chopped
    1 stalk celery, thinly sliced, or 1/4 tsp. celery seed
    1/2 (10-oz.) block cheddar cheese, cut into bite size pieces
    3 Tbsp. seedless raisins
    1 c. chopped cooked chicken (optional)
Preparation
    Cook macaroni
    according to package directions, using 1 teaspoon salt in water; drain and set aside.
    In a large bowl, combine oil, lemon juice, sugar, poppy seeds, mustard and remaining 1/4 teaspoon salt.
    Add drained macaroni, walnuts, apples, celery, cheese, raisins, and chicken, if desired.
    Toss to blend well.
    Serve with crackers.
