3/4 c. instant grits
3/4 c. milk
3/4 c. water
1/2 tsp. salt
1/2 c. butter
6 oz. Cheddar cheese, grated
3 eggs, lightly beaten
Preparation

Preheat oven to 350 degrees.
Place the grits, milk, water and salt in the top of a double boiler.
Cook, stirring occasionally, until moisture is absorbed.
Place butter and grated cheese in a 1-quart souffle dish and add cooked grits, blending until cheese and butter are melted.
Cool slightly, and beat in eggs.
Bake for 30 to 40 minutes or until the top is browned.
