Cream Caramels - cooking recipe
Ingredients

1/2 c. nuts, finely chopped (optional)
2 c. sugar
3/4 c. light corn syrup
1/2 c. butter
2 c. whipping cream
Preparation

Butter an 8 x 8-inch pan.
Combine sugar, syrup, butter and half the cream in a large pan.
Heat to boiling over medium heat, stirring constantly.
Stir in remaining cream.
Cook over medium heat, stirring occasionally until mixture reaches 245\u00b0 on candy thermometer or small amount of mixture dropped into very cold water forms a firm ball.
Add vanilla (1 teaspoon) and spread immediately into pan.
Cool.
Cut into 1-inch squares.
