Galloping Gourmet'S Chicken - cooking recipe

Ingredients
    2 small chickens, cut up and skinned (if you prefer)
    2 oz. olive oil
    salt and pepper
    1 or 2 cloves chopped garlic
    1 green pepper, cut into strips
    1 red pepper, cut into strips
    4 oz. chopped mushrooms
    1 pepperoni, sliced thin
    4 large, skinned and largely diced tomatoes or canned tomatoes
    1 can sliced black olives (can omit)
    6 oz. light dry wine (Sauterne)
    good handful chopped parsley
Preparation
    If you are watching your fat grams, microwave the pepperoni on a plate covered with several paper towels for a minute or two to remove a lot of the fat.
    (Check frequently so that the pepperoni doesn't burn.)
    Saute the chopped garlic and sliced green and red peppers.
    Set aside.
