Creamed Chicken - cooking recipe

Ingredients
    4 single chicken breasts
    water
    1 small onion
    1 small carrot
    1 rib celery
    small bay leaf
    salt and pepper
    1/4 c. butter
    1/4 c. flour
    1 1/2 c. milk
    2 Tbsp. chopped pimentos
    patty shells
    hot biscuits or cornbread
Preparation
    Cover chicken breasts with water; add next 5 ingredients and cook until tender.
    Cool; drain and then cube, discarding skin and bones.
    Strain stock, melt butter in saucepan and blend in flour, salt and pepper.
    Stir in chicken stock and milk.
    Cook over low heat until thickened, stirring constantly.
    Add chicken and pimentos and heat thoroughly.
    Serve in patty shells, over biscuits or cornbread squares.
    Serves 6.
