Eggplant And Garbanzo Stew - cooking recipe
Ingredients

1 large onion, chopped
1/2 c. olive oil
1 can garbanzo beans, drained
1 large eggplant, peeled and cut in 3-inch wedges
1 can whole tomatoes
salt and pepper to taste
Preparation

Saute onions in oil in saucepan.
Add seasoning, beans and eggplant.
Cover and simmer 15 minutes.
Rotate vegetables.
Add tomatoes.
Liquid should come to half the depth of vegetables in pan.
Cook on medium until eggplant is done.
May be served hot or cold.
