Lemon Meringue Pie - cooking recipe
Ingredients

1 1/4 c. sugar
1/4 c. cornstarch (4 Tbsp.)
1/4 tsp. salt
1 1/2 c. boiling water
2 egg yolks
2 Tbsp. butter
1/4 c. lemon juice
grated rind of 1 lemon
Preparation

Combine sugar, cornstarch and salt.
Add boiling water.
Cook until thickened, stirring constantly.
Add slowly a small amount of hot mixture to beaten egg yolks, return to remaining hot mixture and cook 1 minute or until thick.
Remove from heat.
Add butter, lemon juice and grated peel.
Pour into baked pie shell.
