Diabetic Pineapple Parfait - cooking recipe

Ingredients
    1/3 cup cold water
    1 envelope unflavored gelatin
    1/2 cup unsweetened, crushed and drained pineapple
    3/4 cup frozen and thawed strawberries
    1 cup vanilla ice cream
Preparation
    Sprinkle gelatin over water. Place over low heat, stirring constantly until dissolved. Add ice cream, pineapple and strawberries. Stir gently until mixed. Refrigerate. Do not freeze.
