Layers Of Veggies - cooking recipe

Ingredients
    1 c. onion, sliced
    1 c. green pepper, chopped
    1 c. mushrooms, sliced
    1/2 lb. potatoes, sliced
    1 c. carrot, thinly sliced
    1/3 c. brown rice (raw)
    1 c. zucchini, sliced
    seasoning without salt to taste
    3 1/2 c. stewed tomatoes, mashed
Preparation
    Saute onion, green pepper and mushrooms.
    Place sliced potatoes in the bottom of a 2 1/2-quart nonstick baking dish. Alternate layers of carrot, rice, onion mixture and zucchini. Stir seasonings into mashed tomatoes and pour over vegetables; cover.
    Bake at 350\u00b0 for 2 hours and serve.
    Serves 8.
