Zucchini Flats - cooking recipe
Ingredients

3/4 c. grated Parmesan cheese
2 eggs
2 Tbsp. flour
2 Tbsp. chopped parsley
3/4 tsp. salt
1/4 tsp. pepper
2 cloves minced garlic
1/4 c. milk
2 large zucchini
flour
1/4 c. oil
Preparation

In a shallow bowl, combine first 8 ingredients.
Beat until smooth.
Cover and refrigerate at least 15 minutes.
Cut zucchini in half crosswise, then lengthwise slices about 1/4-inch thick. Lightly dust each with flour.
Heat oil over medium heat.
Dip each slice in cheese mixture.
Cook a few at a time until golden.
